The perfect dessert and it really does have the cherry on top!
Ingredients
300g chocolate 68%
185g cream
115g milk
2 beaten eggs
300ml Morello Cherry coulis
5g Agar Agar
Method
Boil cream and milk, add to beaten eggs then add mixture to melted chocolate. Bake @ 98oc for approx 40minutes. For the cherry gel place the puree in a saucepan add agar and cook out for 3 minutes. Strain, allow to cool to set then blitz using a hand held blender until a smooth consistency. For this recipe you need to use a high cocoa content of chocolate minimum 68%. Works great with the cherry gel a classic combination cherries and chocolate!
