Almost 1000 years old and still a tradition that is hugely anticipated in households across the globe. Pancake or Shrove Tuesday is the feast before the fast...over indulgence is expected and don’t feel at all bad about it! Whether you prefer the more traditional pancake set up - large, thick and simply sprinkled with lemon juice and sugar or this funked up version below, just make sure that you make enough…Enjoy!
Ingredients
100g plain flour
2 tbsp. baking powder
1 tbsp. golden castor sugar
1 tbsp. cinnamon
1 tbsp. of lavender honey
2 large eggs
284ml of buttermilk
25g butter – melted
Method
Add all dry ingredients to bowl make a well in the centre and beat in buttermilk and egg mixture. Mix well until you achieve a smooth batter like consistency. For the caramelised banana, slice and cook in a hot pan with butter and sugar until caramelised. Cook the pancakes in a non-stick pan with butter for approx. 2 mins either side (depending on size) Serve with warm caramelised banana and a drizzle of lavender honey, you can also add some natural yoghurt if you so wish.
Serves 8-10 depending on size of each
