Smoked Applewood Cheese, Leek Mushroom Tart

This dish appears occasionally on our specials board and proves to be an extremely popular starter course. You can also serve with a substantial salad for a great healthy main course option.

Ingredients

1 x pre baked short crust pastry tart

6 x eggs

100g x smoked Applewood

1 x washed & sliced leek

100g x button mushrooms

500ml x double cream

1 x onion, diced

25g x butter

2 sprigs thyme

Method

Pre bake the pastry case and allow to cool. Sweat the leeks, onion and thyme in the butter add the sliced button mushrooms. Remove from heat allow to cool slightly before adding the beaten eggs and cream. Finally add the grated cheese and check seasoning, pour into pastry case, cook for approx. 35 minutes @ 160oc.
