Redcastle Hotel has prepared a
Ginspiration evening where the distinctive culinary style of
the Edge Restaurant and the best
Irish gins will be combined for an unforgettable gastronomic experience.
The Ginspiration menu is the result of a suggestive selection of local produce and the most exclusive Irish gins. All dishes have been created by award-winning chefs with Gordon Smyth and his tem. Thus, they will present seven suggestive recipes with extraordinary flavours to surprise and amaze the attendees.
Gin plays an essential part in this special menu, that is why all of them have been wisely chosen.
Listoke Gin will complement the Burtonport Curried Crab Cake perfectly; then the Roast Wood Pigeon will be served, with
Gunpowder Gin Reduction, followed by Pink Grapefruit, Jasmine &
Shortcross Gin Granita. The delicious Loin venison will be dressed with delicious
Boatyard Gin Jus and the chocolate tart will have a very special honeycomb, courtesy of
Jawbox gin (see full menu below).
