Executive Head Chef Gordon Smyth taps into the stunning location of The Edge and the wider area, using the freshest of seafood from the lough, to locally grazed lamb. His dishes, from lamb fritters and pork belly with an apple foam to tempting desserts are all precisely executed, immaculately presented and packed with flavour.
