The 2AA Rosette Edge Restaurant, set in The Redcastle Hotel in Inishowen, launched its exciting new spring/summer menu on Friday 29th April. The new menu has been created by Executive Head Chef Gordon Smyth and his team, with emphasis in seasonality, local produce and light fresh ingredients. Residents and visitors will delight in the mouth-watering selection of new starters, mains and desserts, while taking in the fantastic panoramic view of the Lough Foyle, Binevenagh and beyond.
To start off, you can choose among a selection of new enticing appetisers, such us the crispy hen’s egg and Clonakilty black pudding, served with wild garlic, as well as other tantalising options. Those looking for a vegetarian alternative will love the Fivemiletown Goat’s Cheese with onion ash, served with roast beets, apple, pumpkin and fennel.
When it comes to the main courses there is plenty on offer in The Edge Restaurant’s new spring/summer menu. Mains include the chargrilled aged Irish sirloin steak or the roast breast of duck. Hake is served pan fried over a bed of saffron, white bean, mussel, buttered asparagus, smoked paprika and fennel.
Lovely vegetarian options are also available, such as the wild mushroom and sweetcorn pithivier with Lyonnaise onions and split chive velouté. The Edge Restaurant also has a
dedicated Vegan Menu available, for those looking for a plant-based alternative, without giving up the taste and the fine dining experience.
If you have a sweet tooth your favourite part comes next: the selection of desserts! Which includes delicious and tempting choices, such as a 72% chocolate fondant tartlet, an espresso mousse or a rhubarb and white chocolate panna cotta and many more!
